Week 14- Back To School With Apples

So we’ve got some Gala apples ready to go into your bags this week.   These are an excellent fresh eating variety that mature earlier in the season than most.   Speaking of maturing, not so early, our tomatoes.   I will pick as they are red, but I’m not pushing it any more.   You may get one or two, I have only been getting about 5-6 ripe tomatoes a day to divide among the masses.    I’m watching with anticipation the hundreds of other plump beauties and I can hardly wait.  It will happen, I promise, they will turn red, pink and chocolate colors soon.

Corn on the Cob – with a twist

Sweet corn with husks, silks removed

Butter or margarine if desired

salt optional

Lemon Basil

Soak ears of corn in cold water for 30 minutes.   Removed from water and push husks back still intact on the ear.   Rub butter, salt and chopped basil on the ears.   Replace husks over the ear of corn.   Grill on medium for 20 minutes, or microwave for 2-3 minutes per ear of corn.   You can use the husks as a handle while eating it.

Apple Cucumber Salad

1 medium Cucumber

2 Gala Apples

2T apple Cider Vinegar

1 T honey

11/2T lemon Juice

Mix together vinegar, lemon juice, and honey.   Slice cucumbers thinly and chop apples into bite size chunks.   Toss dressing with apples and cucumbers and chill for at least one hour.

So we are getting:

1. Apples

2. Cucumbers

3. Sweet Corn

4. Beans

5. Eggplant

6. Potatoes

7. Zucchini

8. Tomatoes

9. Lemon Basil

Have a great week everyone!
